ROAST CHICKEN

Ingredients:


1 whole chicken (3-4 lbs)

4-5 medium potatoes, peeled and chopped into chunks

3-4 large carrots, peeled and chopped into chunks

1 large onion, chopped into chunks

2-3 cloves of garlic, minced

2 tablespoons of olive oil

1 teaspoon of dried thyme

1 teaspoon of dried rosemary

Salt and black pepper to taste

Instructions:


Preheat your oven to 400°F (200°C).

Rinse the chicken under cold water and pat it dry with paper towels.

In a small bowl, mix together the minced garlic, thyme, rosemary, salt, and pepper.

Rub the chicken with the olive oil and the garlic and herb mixture, making sure to coat it well on all sides.

Place the chicken in a roasting pan or baking dish, breast side up.

Arrange the chopped potatoes, carrots, and onion around the chicken in the pan.

POT ROAST

Ingredients:


1 (3-4 lbs) beef chuck roast

4-5 medium carrots, peeled and chopped into chunks

2-3 medium onions, chopped into chunks

4-5 medium potatoes, peeled and chopped into chunks

2-3 cloves garlic, minced

2 tablespoons olive oil

2 cups beef broth

1 tablespoon tomato paste

2 teaspoons Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper to taste

Instructions:

Preheat your oven to 325°F (160°C).

Season the chuck roast with salt and pepper.

Heat the olive oil in a large oven-safe Dutch oven or pot over medium-high heat.

Sear the chuck roast on all sides until browned, about 3-4 minutes per side.

Remove the roast from the pot and set it aside on a plate.

Add the chopped onions and garlic to the pot and sauté for 2-3 minutes until softened.

Add the carrots and potatoes to the pot and sauté for another 2-3 minutes.

Add the beef broth, tomato paste, Worcestershire sauce, thyme, and a pinch of salt and pepper to the pot.

Stir well to combine all the ingredients.

Return the seared chuck roast to the pot, nestling it down into the vegetables.

Cover the pot with a lid and transfer it to the oven.
