Optional toppings: grated cheese, crumbled bacon, chopped green onions
Instructions:

Melt the butter in a large pot over medium heat.
Add the chopped onion and garlic to the pot, and cook until the onion is translucent and the garlic is fragrant.
Add the chicken or vegetable broth and the diced potatoes to the pot, and bring to a boil.
Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the potatoes are tender.
Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
Return the pureed soup to the pot and stir in the heavy cream.
Season with salt and pepper, to taste.
If desired, top each serving with grated cheese, crumbled bacon, and chopped green onions.
